Come da ricetta indicata da Kembol ed assaggiata a Rieti 2012 (scusandomi per eventuali errori di traduzione)

Ingredienti
1/2 chilo (1 libbra) carni suine fresche
1 cipolla
1 kg (2,2 libbre) costolette di maiale di piccole dimensioni
1 tortilla di mais
2 spicchi d'aglio
Timo qb
2 peperoncini cascabel
Origano qb
2 peperoncini pasilla
Sale e pepe qb
1 tomatillos grande o due piccoli
olio

procedura
Tagliate la carne a cubetti.
Tagliate le costole in 2 sezioni.
Salare ed impepare per bene.
Usando una padella, far rosolare per bene in olio bollente, aggiungere la cipolla alla carne.
Tenere da parte la padella.
In un altro tegame tostare con attenzione l'aglio, i peperoncini cascabel e pasilla.
Non lasciate che diventino troppo scuri o saranno amari.
Metti il mix in una ciotola a parte.
Nella stessa padella, far rosolare la tortilla di mais.
Quando tutti gli ingredienti sono ben tostati, metterli nel frullatore insieme ai tomatillos aggiungere un po 'd'acqua, e si frullano fino a quando gli ingredienti sono ben amalgamati.
Aggiungere il composto frullato alla carne nella padella. Aggiungere timo ed origano a piacere.

Lasciar cuocere a fuoco molto basso per circa un'ora, aggiungendo acqua a poco a poco, se necessario, in modo che la carne e la salsa non si secchino.

Per 4-6 persone, accompagnato da arroz alla mexicana (riso in stile messicano),
frijolitos Negros (fagioli neri), ed un sacco di tortillas calde appena fatte.

Ingredients
1/2 kilo (1 pound) fresh pork
1 onion, quartered
1 kilo (2.2 pounds) small pork ribs
1 corn tortilla
2 cloves garlic
Thyme to taste
2 chiles cascabel
Oregano to taste
2 chiles pasilla
Salt and pepper to taste
1 large or two small tomatillos
Oil

Procedure
Cut the meat into 2" cubes. Cut the ribs into 2" sections. Salt and pepper well. Using a frying pan, sauté in hot oil until well-browned, adding the quartered onion to the meat. Reserve the meat and onion in the frying pan.

In another pan, carefully toast the garlic, the chiles cascabel and pasilla. Don't let them become too dark or they will be bitter. Reserve the mix in a separate bowl. In the same frying pan, sauté the corn tortilla. When all the ingredients are well-toasted, put them in the blender along with the raw tomatillos, add a bit of water, and blend until the ingredients are well blended. Add the blended mixture to the meat in its frying pan. Add the thyme and oregano to taste.

Allow to cook over a very low flame for about an hour, adding water little by little as needed so that the meat and sauce do not dry out.

Serves 4-6, accompanied by arroz a la mexicana (Mexican-style rice), frijolitos negros (black beans), and plenty of freshly made hot tortillas.

Max me li ricordo quei due piatti mangiati a Rieti (occhioni) era buono come il più buono dei piatti buoni :)
